Hello fellow brown-baggers :)
So, last week, I had sandwiches each day. Ham and cheese, roast beef and cheese, etc. It's not my usual pb&j rut, but I'm looking to get more interesting and skip the sandwiches. :) Today, I had leftovers from a picnic yesterday: smoked chicken and pork. Mmmmm....
This week I want to try the quinoa dish that was part of the suggested recipes last week. That looked yummy! As grocery shopping didn't happen this weekend, we'll have to wait a bit longer to try it. Tomorrow will probably be a sandwich again, and Wednesday I have to skip the challenge as we have a staff meeting with lunch provided.
